Ducklike Dinosaur, Calandraca

They have discovered a dinosaur which looked like a duck, swam, and was about the size of a turkey. Its skeleton is 70 million years old. Despite its appearance it is related to the velociraptor. They had to rescue the skeleton from poachers. The skeleton was found in Mongolia.

Reading one of  Daniel Silva's spy books, The Heist, the protagonist's wife made Calandraca, so, of course, I had to look that up. I think it looks and sounds pretty good. So typically Italian. The English name is Veal Stew with Potatoes. Sounds uninteresting in English doesn't it?

Calandraca

Meat and potatoes are the base of this traditional Italian recipe that is perfect for the colder months of autumn.

2 lb veal meat
1 carrot
1 onion
3 oz tomato sauce
½ cup white wine
4 potatoes
¼ cup of butter
2 Tbs oil
salt and pepper to taste
2 oz all-purpose flour

1. Add olive oil and butter to a pot and place over medium heat. Once the butter has melted, add thinly sliced onion and carrot.

2. Once the onion is golden, add lightly floured meat diced meat. Brown the meat on all sides, then add the white wine, tomato sauce, salt and pepper: stir.

3. Once the sauce has thickened and the liquid has been absorbed, add peeled, chopped potatoes.

4. Add enough water to cover the meat completely and cook in an uncovered pot for 45 to 50 minutes. Once the meat and potatoes are tender, remove the pot from the heat and serve the stew hot.

Servings: 4

  1. That looks like stew my Italian mom used to make. We ate lots of veal and pork. And rabbit.

  4. I wonder if it was a stupid and ornery as a turkey or a bit nice like a duck. Thank God they retrieved it from the poachers. How is Matt?
